According to this and several other documentaries, the whole low-fat imperative appears to be down to one individual and his false science: Ancel Keys, forty years ago, promoted for the benefit of big agribiz in the USA.

This documentary is not so malodorous, and it would take quite a long time to provide counter arguments. However, the second article seems a much more balanced critique.
But for me personally, the documentary rings true. I have tested many different diets to improve my own health condition, and so far, I find that avoiding most forms of grains and legumes from my diet, and maintaining quite a high fat intake (mostly olive oil and cream - the diet Francais :) ) along with a modest amount of sea food is most beneficial. While I have never had a significant weight problem, allergies have always been a persistent burden, and I have managed to eliminate most of them this year.
As for conspiracy theories - I look for conspiracy facts, drawing upon the wide range of sources that is so freely available on the web.
I also follow a low-carb diet because my sugar levels where a little high (120), now back to normal (80), but low in refined carbohydrates and foods with a high glycemic index. But I can eat legumes, that have carbohydrates but a low glycemic index because they contain much fiber and do not produce glycemic spikes.
Being Spanish, you can guess that I consume a lot of olive oil, which is healthy. I also ate nuts (without salt, sugar or saturated fat added), that contain fat, but not saturated fat, and are healthy. The problem is not fat, but saturated fat. It is not the same to eat olive oil (good) that palm oil (very bad).
The main culprit of the obesity epidemic is the junk food, not carbohydrats per se. Ultra-processed food is full of sugar, salt, saturated fat and chemicals.
In the Mediterranean cuisine, we use very much what in Spain we call a "sofrito" (look at the Wikipedia for a description). I make it using extra virgin olive oil, fresh tomatoes, garlic and sweet red paprika (it can also contain onion and spices depending on the dish you are going to cook), but if you buy it in the supermarket, it contains oil of lesser quality and a lot of sugar, salt and chemicals. The first one is healthy; the second one is not, but many people buy it in the supermarket (as well as a lot of processed food) so they don't have to cook. I like to cook and I have time for it.

The Mediterranean diet is well regarded here, and we depend on a regular supply of Spanish vegetables and olive oil.
Unfortunately I could not access your Nat Geographic link due to a subscription wall but I think I know the arguments, and that things didn't end well for Dr Atkins, who developed the Atkins diet. We are not well adapted for high protein intake.
I have not tried a full-on keto diet for any significant length of time - it makes you feel slightly drunk :).

Having been in Italy i must admit that the women in Italy look better then here (see Ricarda Lang, etc.)
So they definitely must do something right with their mediteranean diet.
However let me sit here between the chairs.
From my long year experience in the field of diet i can tell you that there are not many rules that really
account for everybody. I have customers who need 250 mg Vitamin B12 per week, and then they do not need artificial hormons. From the standpoint of "Modern science" this would not make sense as they say that B12 is stored in the body for at least 6 month and a normal person needs much less.
The point is, every person is different and your Job is to get in contact and find out "whats good for you".
There are people who grew up eating a lot of meat and its not a good idea to force them to "Soyland Green".
Other people - from India - live completely vegetarian since young years and it would not be a good idea to force them to eat steaks. Let me just say this as a general statement without going into details.
Well here is a doctor that advocates a starchy vegan diet with no oils or fats - the exact opposite of keto/paleo!
I have tried this approach but it makes me feel hungry all the time, and never satisfied.
Eating starches makes my blood sugar spike. How is that good?

Saturated fat gets a bad press, but it is a natural part of our diet (human breast milk even). We are well equipped to metabolize it, and there is no direct evidence that it causes plaque or blockages in blood vessels. So my advice to the German ladies is just enjoy the butter and cream but throw away the rest of the gateaux :)

From what i have heared - ad this is just from Hearsay - the Rapeseed Oil should be avoided due to much chemical treatment and unhealthy contents. I don't know how your Oil overthere is. Just a comment to be careful with Rapeseed Oil generally.

From my own thumbnail point of view the virus itself resolved the pandemic by evolving into a much milder though far more infectious pathogen. Vaccines give transient protection at best but risk serious harm to about 1 in 10000 recipients, and we still have 10-15% excess mortality which may be attributed to the long-term effects of the vaccines.
The problem with mRNA vaccines is that you cannot control the dosage or duration of spike-protein production.
